As you might have gathered from my last post, I’m a bit of a gin fanatic. While a dry martini will always be the way to my heart, there’s nothing that refreshes quite like a Tom Collins. A classic in its own right, the Collins hasn’t gotten the respect it deserves lately. Personally, I lay the blame on those atrocious bottled Collins mixes. They’re a surefire way to keep someone from ever trying one again. Today, I’m going to show you my trick for an effortless Tom Collins that will keep you from slaving over a saucepan for simple syrup.

A traditional Collins is gin, lemon juice, simple syrup, and club soda. However, I’ve found that San Pellegrino Limonata is a perfect balance of sweet and citrus notes, making it a phenomenal substitute for those subpar bottled Collins mixes. Grab a highball or a Collins glass and pack it with ice. A Collins glass is taller and narrower than a highball but either will suffice. Drop in two ounces of your favorite gin—as I mentioned, I’m a Tanqueray man but try a bunch and find what you like—and fill to the top with Pellegrino. I like to squeeze a lime wedge and use it to garnish. While the Limonata is very well-balanced, the lemon note is just a touch more forward than the lime.

That’s all there is to it, ladies and gents! Although the sweet effervescence might make the Collins seem like a strictly warm weather drink, I think its bright, clean flavor profile totally works year round.
