A Recipe & DIY With Coca-Cola

coca_cola_coke_sponsored_whoopie_pies_dessert_1This holiday season I’m super thankful to be teaming up with some of my favorite brands to create beautiful campaigns. (See the previous with SPLENDA® and Scotch®!) Coca-Cola is no different, I grew up in a house where Coke was a form of coffee, everyday. My mom still drinks Diet Coke religiously when she wakes up in the morning. (Weird, I know.) I wanted to take something that I’ve grown up knowing and loving, and make a sweet treat and gift idea with it in order to spread the joy of the holidays. When I think of Coca-Cola I think of classic Coca-Cola cake! With this is mind I made a whoopie-pie version of a classic, Southern recipe!

What makes Coca-Cola cake special is that it’s made with actual soda and marshmallows in the batter! There are two special tricks when making the cake. First, make sure you’re using the Coca-Cola that comes in glass bottles. (I got mine at Sam’s Club!) This is important because these are made with real sugar and no high fructose corn syrup. Second, it’s supposed to be a very moist cake so I recommend removing it a little before the center is fully cooked. The frosting is a super rich, fudgey chocolate with chocolate flakes! One of my favorite sweet treats!

Coca-Cola Cake Whoopie Pies


  • 1 cup Coca-Cola
  • 1 cup butter or margarine, softened
  • 1/3 cup cocoa
  • 1 3/4 cups sugar
  • 2 cups all-purpose flour
  • 2 cups miniature marshmallows
  • 1/8 teaspoon salt
  • 2 large eggs, lightly beaten
  • 2 teaspoons vanilla extract
  • 1/2 cup buttermilk
  • 1 teaspoon baking soda


  1. Preheat the oven to 350 degrees.
  2. In a large pot, bring the butter, soda, and cocoa powder to a boil, whisking until combined. Immediately remove from heat.
  3. In a separate bowl, combine the flour, sugar, marshmallows and salt.
  4. Then quickly add the flour mixture into the pot and mix until combined and marshmallows are almost melted.
  5. In a liquid measuring cup, whisk together eggs, buttermilk, baking soda and vanilla. Slowly add to the pot but continue to fold until everything is combined.
  6. Line a cookie sheet with parchment paper and rub with butter.
  7. Drop onto the pan by heaping tablespoons, 2 inches apart, on each prepared cookie sheet.
  8. Bake for around 25 minutes- you want the center to be gooey!
  9. Let it cool completely, then use a buttered spatula to remove them from the pan!


Whoopie Pie Chocolate Fudge Icing:

1 stick real butter 1/2 cup cocoa 3 tablespoons whole milk 1 teaspoon vanilla 1 lb powdered sugar Chocolate flakes for topping

In a saucepan heat the butter, cocoa powder and milk until the butter has melted. Remove from heat and add in the vanilla and powdered sugar. Mix well until the texture is smooth! Put between two cakes and let cool.

My mom is a rockstar at making gift baskets, and growing up I used to love helping putting together big, extravagant ones with her. I had such a fun time making this “Treat Yourself” gift basket targeted towards a relaxing night at home!

I picked up a large 24-pack of Coke bottles while I was shopping at Sam’s Club. (You can also find a 4-pack of 2 liter Coca-Cola on sale for the holidays at Sam’s Club for only $3.98!) Everyone loves a Coke, so they make great focuses in gift baskets like the one above, as well as for entertaining, cocktails, and cooking!

In our basket we included everything you would need for a quiet night in watching movies or catching up on some Netflix! Popcorn and soda, some festive straws, hand butter, and of course a deliciously smelling candle, to just name a few. What would you include in your gift basket?
